2021 Petit Verdot
Our 2021 Petit Verdot has the deep color we love about this wine, with aromas of leather and cedar. This is not a fruit forward wine, instead bringing earthy/woodsy flavors along with rounded tannins and a full body. We enjoy this wine with roasted meats, grilled portabello mushrooms, and lasagna.

Production notes
These grapes were hand harvested and sorted in the field to remove unripe fruit and any foreign materials that could possibly affect the wine. In the winery we de-stem the grapes from the cluster and do a final hand sorting to ensure that only the best grapes are left for processing. The grapes were then put into a tank and left to “cold soak” at about 42°F for about four days before we began fermentation.
After primary fermentation is complete, we then transfer the wine into both American and French oak barrels and aged for 15 months.

Petit Verdot can be such a powerful wine that we like to take our time with it. Performing a cold soak on the grapes prior to fermentation allows us to "draw out" the deep color that this wine is known for, and also helps to reduce the astringency of the tannins. We then use neutral American and French oak barrels to age the wine in helping us to develop the rounded tannic structure that keeps this wine bold but approachable. We also let this wine bottle age for almost two years before releasing it which helps to bring out that smooth finish.
