2021 Cabernet Sauvignon
Our 2021 Cabernet Sauvignon has a dark purple color that looks beautiful in the glass, and aromas of dark fruits. Flavors of dark jammy fruits with medium tannins and a medium/heavy body make this a Cab that you can enjoy by the glass at the end of a busy day or on those cooler fall days. We enjoy this wine with grilled meats, pizza, and chocolate desserts.

Production notes
These grapes were hand harvested and sorted in the field to remove unripe fruit and any foreign materials that could possibly affect the wine. In the winery we de-stem the grapes from the cluster and do a final hand sorting to ensure that only the best grapes are left for processing. These grapes were then put into a tank and left to “cold soak” at about 42°F for about four days before we began fermentation.

Cabernet Sauvignon is a later season ripening red wine grape that we harvested in late September. Primary fermentation was done in stainless steel tanks, then the wine was transferred into American and French oak barrels for about 15 months for aging and secondary fermentation. This red wine has a medium body and medium tannins at the front and mid-palate. Grilled beef, mushroom pizza, and savory cheeses pair well with this wine.
