2022 Silver Moon
This dry white wine has a light body and smooth finish, with citrus/lime and green apple/granny smith flavors that combine for a great summer wine that can be enjoyed sitting on the porch/deck or at the beach. The crisp acidity also allows this wine to pair well with hard dry cheeses, lighter meats like grilled chicken or fish, and also with creamier pasta dishes like carbonara.

These grapes were hand harvested and sorted in the field to remove unripe fruit and any foreign materials that could possibly affect the wine. In the winery we processed each varietal independently to produce a traditional white wine and then blended the finished wines. We whole cluster press the grapes, then move the juice into stainless steel tanks so that we can control the temperatures to about 50° F. After letting the juice settle we began cold fermentation which lasts for about three weeks.

Our first time creating a blend with our Riesling grapes, this wine was made using 50% Riesling and 50% Trebbiano grapes. Over the years we have learned that Rieslings take more bottle aging than most of our other wines to truly develop their flavors and aromas. Sometimes this creates more anxiety than we'd like, but so far we have always appreciated the end result. And creating wines will certainly teach you to be patient!
The Riesling gives us beautiful green apple characteristics and our warmer climate keeps that green apple more like a granny smith than a golden delicious. The Trebbiano helps to bring out the citrusy notes and crisp finish. Perfect since we are wanting this wine to feel dry on the palate, and with its light body and easy finish this wine is a refreshing companion for hot summer days.
